When I'm hand-quilting an area that is long and open, I cut my thread twice as long as normal. I take one stitch and pull the needle through until the ends are even. I quilt in one direction using the thread end with the needle. Then I pick up the loose end, rethread the needle, and quilt in the other direction. This way I have one less knot in my work.
