When I make a mistake in foundation piecing, I find the short stitches difficult to remove with a seam ripper. What works well for me is an eyebrow razor that I purchased at a drug store. I use it to cut the stitches between the layers of fabric (not between the fabric and paper). The tiny razor only cuts the thread, which I can easily brush away before I resume sewing.
