When I'm working on a quilt, I use pinking shears to cut swatches of the fabrics I've chosen. I safety-pin the swatches to a key ring and keep it in my purse. This way I can easily check a fabric I'm considering buying to see if it's a good match for the in-progress project. It's easy to add on or take off fabrics as quilts are begun or completed.
